Bruschetta

Growing up on a farm, I often took the access to fresh fruit & vegetables for granted. Not anymore – we search for local Farmers Markets as soon as we visit a community. Quebec City was no different. One of the vendors there sold local delicious cheese, and I purchased a package of fresh soft goat cheese. With all the fresh produce, I decided to make Bruschetta for a quick & easy appetizer.

Ingredients:

2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons olive oil
2 1/2 cups diced tomatoes (I used cherry tomatoes, but Roma tomatoes work as well)
1/3 cup thinly sliced fresh basil leaf
salt & pepper to taste
soft goat cheese
1 baguette

Directions:
1. Heat garlic in olive oil – do not brown. Let cool
2. Mix oil, garlic, tomatoes and basil in mixing bowl. Season with S & P.
3. Cut baguette into rounds. Spread with goat cheese

4. Place under broiler until cheese is just warmed.
5. Spoon mixture on top of bread and enjoy.
